What is a Wet Burger?

The Islak Hamburger (wet burger) is Istanbul's most iconic late-night street food. These small, steamed burgers sit in a glass case, soaking in a garlic-tomato sauce that makes the bun soft and incredibly flavorful. They are a beloved post-nightlife snack.

Where to Find the Best Wet Burgers

The most famous spot is Kızılkayalar in Taksim Square, which has been serving wet burgers since 1960. Other popular spots include Bambi Cafe nearby. Taksim Square is the epicenter of wet burger culture.

How Much Do They Cost?

A single wet burger costs around 30–50 TL. Most people eat 2–3 at a time. They are one of Istanbul's most affordable street foods.

Are wet burgers good?

They are an acquired taste! The garlic sauce and soft, steamed bun are unlike any burger you have tried before. Most travelers end up loving them. Best enjoyed late at night after exploring Taksim.

Do not expect a gourmet burger - it is a cheap, greasy, delicious guilty pleasure. I ate 3 in one sitting after a night out in Taksim. At those prices, why not? It is the Turkish equivalent of a late-night kebab in London.
